Healthy Pancakes!

Ingredients

  • 1 very ripe banana; mashed
  • 1 Egg
  • 2 Tbs (or more, depending on desired thickness) Almond Flour/Desiccated coconut

I made this recipe after craving American Style pancakes (the little fat ones!) so used almond flour and whisked all my ingredients in a blender to get some air into the mixture, cooked in a little butter and they turned out lovely and fluffy, but made them a bit fragile to flip! Went down great with some Total 0% (but any Greek yoghurt will do) and honey.

I will be making this recipe again but with just eggs and mashed banana, the mixture was quite thin, so think this would make more of a crepe – will let you know how they turn out!
