I fancied trying out overnight oats and as i had some fresh pineapple to hand decided on Piña colada
- 1/2 cup oats
- 1 cup milk
- Tbs chia seeds
- 2 Tbs of desiccated coconut
- 1/4 pineapple pureed (I mixed half of it in, and lay the other half on top)
- 1/2 Tsp vanilla essence
Add to a jar/bowl and leave to soak overnight.
In the morning i added a bit of golden syrup as i found it bitter for some reason? I’m not really pleased with this recipe yet, but will have a search for some ideas and whether other people have tried the Piña colada flavor before. In the end i actually opted out and had wheetabix, but my housemate thoroughly enjoyed it, hence why I’m posting it, even though I’m not fully happy with the end flavor —- there is room for improvement. I think next time I will use coconut cream with milk instead of desiccated, and not add the vanilla.
