There’s something amazing about BREAD, it’s so versatile and nothing beats a freshly baked loaf. I’m a firm believer that you should use what you have, including left-overs. Everyone has basics in their kitchens: eggs, milk, butter, sugar, +/- chocolate and some form of fruit, which brings me onto this recipe. After our weekend BBQ we had some (inevitably – always buy too many) leftover sesame burger buns which I decided to turn into a form of ‘Eggy-bread/bread and butter pudding for one’.
- 1 sliced bun
- Sweet egg mixture: Tbs brown sugar, 100ml milk, 1 medium egg, Tsp Vanilla essence/extract (depends what you have to hand/prefer)
- Knob of butter to fry
- Dip each half into the egg mixture until fully submerged and soaked
- Heat the butter in the pan and add the soaked bread, cooking each side until golden (turn once)
- Plate up and add toppings of choice – I went with frozen raspberries, 85% dark chocolate, vanilla yoghurt and dried cranberries.
