There’s something amazing about BREAD, it’s so versatile and nothing beats a freshly baked loaf. I’m a firm believer that you should use what you have, including left-overs. Everyone has basics in their kitchens: eggs, milk, butter, sugar, +/- chocolate and some form of fruit, which brings me onto this recipe. After our weekend BBQ we had some (inevitably – always buy too many) leftover sesame burger buns which I decided to turn into a form of ‘Eggy-bread/bread and butter pudding for one’.

Ingredients

  • 1 sliced bun
  • Sweet egg mixture: Tbs brown sugar, 100ml milk, 1 medium egg, Tsp Vanilla essence/extract (depends what you have to hand/prefer)
  • Knob of butter to fry

Method

  1. Dip each half into the egg mixture until fully submerged and soaked
  2. Heat the butter in the pan and add the soaked bread, cooking each side until golden (turn once)
  3. Plate up and add toppings of choice – I went with frozen raspberries, 85% dark chocolate, vanilla yoghurt and dried cranberries.
  4. Enjoy!
vARIATIONS
  • Cinnamon & Honey
  • Basins/sultanas
  • Banana & Walnut
  • Peanut butter
  • The choices are endless!
