Spinach, Cheese & Tomato Fish bake

This recipe has been a family staple whilst growing up; its delicious, nutritious and goes great with a fresh French baguette. My fish bake is so simple to make and needs no sides, it’s also baked in one dish, so saves on the washing up! My recipe if for one (large) or two people.


  • 2 chunky cod fillets (I defrost ones from Tesco)
  • 200g (about 1 bag) of fresh spinach
  • 3-4 Tomatoes
  • 2 slices of cheese/as much grated cheese as you want


  • Fill the bottom of a baking dish with spinach and lay the fish fillets on top – season with salt and pepper
  • Slice your tomatoes and lay over the entire dish (season again if needed)
  • Lay your cheese slices/grated cheese on top
  • Bake for 25-30min at 180C — check your fish is fully cooked and piping hot before serving (should easily flake)
