As the weather gets warmer I tend to go off the idea of a hot bowl of porridge for breakfast, however, when I go a morning without a bowl of oats, I feel more hungry and normally end up having them for dinner! So I decided to use my standard porridge mix but soak overnight then top with fruit and yoghurt in the morning
- 1/2 cup oat mix (I make a big batch, will have to note it down sometime, but its basically: oats, oatbran, chia seeds, cranberries and soya protein powder)
- 1/2 cup water
- 1/2 cup milk
- Add all the ingredients to a jar/bowl and stir
- Give it a mix again after about a half hour (may want to add some more milk at this stage) then leave overnight
- In the morning, top with fruit and yoghurt of choice. I like bananas with my oats and you can’t go wrong with greek yoghurt. I’ve also mixed in a pot of fat free vanilla activa before which makes it lovely and creamy.
