Blueberry Breakfast Pudding

IMG_1424.JPGIf you’re a lover of muller rice pots/rice pudding in general but feel it’s a tad on the unhealthy side and want a lighter version – this recipe is a must! If you’ve read my previous On The Go Breakfast, you’ll see that I like to jazz up my breakfasts and have something more interesting that plain ol’cereal. Bulgur wheat and quinoa are also great protein, fibre and energy sources to set you up for the day!


  • 1/2 cup cooked bulgur wheat + quinoa mix
  • 3/4 cup of greek yoghurt
  • 1 scoop of Fitness Guru Blueberry Cheesecake protein powder mixed with a dash of milk (of choice)
  • 1/2 cup fresh blueberries
  • Honey/maple butter or syrup to taste

One Egg®


  • Mix the protein powder in with the yoghurt until the majority of the lumps are gone (I can never get them all out, but adding more milk does help, just watch it doesn’t go too runny)
  • Add in the quinoa & bulgur wheat and mix thouroughly until all coated
  • Add in fresh blueberries and mix again

Top with granola/fig/more fresh fruit. Its up to you! It can be made in advance so be adventurous!IMG_1423.JPG
